Veggie BBQ Brochette

Vegetable skewers on a cast iron skillet.

Veggie BBQ Brochette

Prep time: 30 minutes

Cooking time: 5 minutes

Makes 12 portions 

INGREDIENTS

12 wood or metal skewers

The marinade :

60ml (2 tbsp) olive oil

30ml (2 tbsp) lemon juice

2 cloves of garlic, chopped

1 tbsp of fresh finely chopped thyme or 1 tsp of dried thyme

1 tbsp fresh finely chopped oregano or 1 tsp of dried oregano

Salt and pepper to taste

The veggies :

1 large red onion, chopped

24 cherry tomatoes

1 medium-sized eggplant, cut into 2.5 cm (1″) cubes

2 medium-sized zucchinis, sliced into 2.5 cm (1″) cubes

1 red pepper, chopped 

1 green pepper, chopped 

1 yellow pepper, chopped 

DIRECTIONS

  1. Preheat the BBQ to medium
  2. In a bowl, mix all the marinade ingredients
  3. Add all the vegetables and mix together
  4. Thread the vegetables on the skewers, alternating colours  
  5. Place on grill and cook for 2-3 minutes per side
